Do I still need SEO if I’m running ads?

You don’t “need” anything. Though running paid ads in conjunction with SEO is mutually beneficial. Google Ads look for similar on page signals as SEO to define your quality score. Google Ads data will give you conversion rates at a search term level, far more detailed than Google Search Console.

Can I do Shopify SEO myself?

Short answer, yes. Long answer, also yes but there is a lot to pick up. Getting the fundamentals setup is easy; page titles, meta descriptions, internal links are out of the box simple enough.
